食谱取自:YUM YUM 第79期<br />
(糖的份量已减少)<br />

牛油250g<br />
幼糖120g<br />
蛋4粒<br />
面粉260g<br />
发粉1小匙<br />
蓝莓干100g<br />
兰姆酒3大匙<br />
核桃100g(切碎)<br />

<span style="color: red;">做法:</span><br />
1.蓝莓干加入兰姆酒浸泡隔夜备用<br />
2.牛油加入幼糖拌打至松软,逐粒加入蛋拌打至松发<br />
3.慢慢加入已过筛的面粉和发粉拌匀,最后加入(1)拌匀<br />
4.倒入铺上油纸的模里,然后洒上核桃碎<br />
5.预热烤箱180度烤约40分钟或至熟(烤箱温度及时间请依据个人烤箱而定)<br />

<u>食谱取自:孟老师的甜点杯第44页</u><br />
<br />
<span style="color: red;">材料:</span><br />
吉利丁片 3又1/2片<br />
冷开水 50g<br />
细砂糖 10g<br />
柳橙汁 300g<br />
柳橙皮 1小匙<br />
蜂蜜 20g<br />
香橙酒 1小匙 (我用兰姆酒)<br />
柳橙果肉 200g<br />
<br />
<br />
<span style="color: red;">做法:</span><br />
1.将吉利丁片放入冰水内浸泡至软化<br />
2.冷开水加细砂糖一起放入锅内,用小火边加热边搅拌,将细砂糖煮至融化即熄火。接着将柳橙汁约100g倒入锅内,再用小火继续加热。(不需沸腾,可将吉利丁片融化的温度即可)<br />
3.加入柳橙皮和蜂蜜,用刮刀搅匀<br />
4.将做法1泡软的吉利丁片挤干水分放入锅内,用刮刀搅拌<br />5.将剩余的柳橙汁倒入锅内,用刮刀搅匀。最后再放入兰姆酒并搅匀<br />6.将做法5的果冻液过筛<br />
7.将做法6整个容器放在冰块上降温至冷却(用刮刀适时的搅动一下)<br />
8.将果冻液平均倒入容器中,即可放入冰箱冷藏至凝固。最后将柳橙果肉铺在已凝固的果冻表面即可。<br />

<span style="color: red;">材料:</span><br />
吉利丁片 5片<br />
冷开水 100g<br />
细砂糖 25g<br />
香橙酒 1小匙 <i>(我用兰姆酒)</i><br />
柠檬皮屑 1/4小匙<br />
柠檬汁 1小匙<br />
七喜汽水(7UP) 1罐<br />
葡萄 150g(去皮后)<br />

<span style="color: red;">做法:</span><br />
1.将吉利丁片放入冰水内浸泡至软化<br />
2.冷开水加细砂糖一起放入锅内,用小火边加热边搅拌,将细砂糖煮至融化即熄火。(不需沸腾,可将吉利丁片融化的温度即可)<br />
3.将做法1泡软的吉利丁片挤干水分放入锅内,用刮刀搅拌<br />
4.放入兰姆酒并搅匀<br />
5.将柠檬皮屑和柠檬汁倒入锅内,用刮刀搅匀<br />
6.将做法5放在冰块上降温至冷却(用刮刀适时的搅动一下)<br />
7.最后倒入汽水,轻轻搅匀(倒入时会有大量气泡,不用过度搅动)<br />
8.将表面的气泡滔出盛在另一个容器<br />
9.将做法7过筛后,再放回冰块上降温,直到刮刀搅动时,呈浓稠状。平均倒入容器中<br />
10.将新鲜葡萄轻轻地放入果冻液内<br />
11.将气泡用搅拌机再打出更多气泡,填在已凝固的果冻上,再放入冰箱冷藏至凝固 <br />

2)取100cc的苹果汁放入小盆里。</div>

3)加入糖,小火加热至糖融化。</div>

4)将泡软的吉利丁片挤干水分后加入煮热的果汁中混合均匀。</div>

5)再将蜂蜜、柠檬汁及剩余的400cc苹果汁加入混合均匀。</div>

6)完成的果冻液倒入倒入自己喜欢的容器中约7-8分满。</div>

7)剩下约100cc的果冻液用其它容器盛装,放入冰箱冷藏5-6小时(或过夜)至凝固。</div>

9)用打蛋器高速打出泡沫。</div>

吉利丁片2片<br />
无颗粒花生酱35克<br />
鲜奶250克<br />
细砂糖30克<br />
<br />
<br />
<br />
<span style="color: red;">做法:</span> <br />
1.先把吉利丁片泡软(放入冰水泡,冰水必须盖过吉利丁片),大约10分钟就好<br />
2.事先将花生酱和35克鲜奶调成液体状备用<br />
3.将剩余的鲜奶及细砂糖放入锅内,用小火边加热边搅拌,将细砂糖煮融即可熄火(不用沸腾,40~50c就好)<br />
4.将泡软的吉利丁片挤干水份放入锅内,搅拌至完全融化<br />
5.最后将(2)的花生酱倒入锅内,搅拌均匀<br />
6.将锅子放在冰水上降温,适时搅动一下<br />
7.平均倒入容器内,放入冰箱冷藏至凝固<br />

浓椰浆75克<br />

清水275毫升<br />
幼糖60克<br />
燕菜粉1tbsp<br />
浓椰浆100克<br />
南瓜泥100克<br />
<br />
做法:<br />
1. 将材料(A)放入锅里以小火煮至溶解及滚,熄火倒入模里待凉,冷藏至凝固后取出,待用。<br />
2. 将(B)料放入锅里以小火煮至滚,加入黑芝麻馅拌均溶化,熄火倒入模里,中间放入1粒(1),待凉,冷藏至凝固,取出待用。<br />
3. 将材料(C),南瓜泥除外,放入锅里,以小火煮至滚后才加入南瓜泥拌均,熄火倒少许在模里,待稍凝固,放入(2)再淋满(C)料,待凉冷藏至凝固,即可享用。<br />

材料:<br />
低筋面粉 246g<br />糖浆 205g<br />
花生油 82g<br />
碱水 7g<br />
<br />
做法:<br />
1。將低筋面粉筛过一次。<br />
2。將所有材料混合均勻至成為光滑面团(別搅拌过度而导致起筋)<br />
3。让面团醒面至少4小時。<span class="Apple-style-span" style="color: #b45f06;"></span><br />
4。醒面后,把面团分成每個35g,<br />
5。放进鱼形模里,然后轻敲出来放进烤盘<br />
6。预热烤箱180度,第一次烘烤大约10分钟后取出扫上蛋黄。继续第二次180度烘烤大约15分钟<br />

高筋面粉150g<br />
细砂糖11g<br />
速溶酵母2g<br />
鲜奶45g<br />
动物性鲜奶油60g<br />
蛋白14g<br />

做法: <br />
1.将(A)打至卷起阶段(所有面团卷在搅拌器的钩上,面盆干净即可),室温发酵2.5~3个小时<br />
2.将发好的(A)+(B)打至面团出现薄膜即可。延续发酵10分钟<br />
3.分割成6等份,滚圆然后松弛15分钟<br />
4.杆卷2次入模(间中松弛10分钟)<br />
5.最后发酵至8分满,放入预热烤箱160度,烘烤大概30分钟(温度及时间因个人烤箱而定)</div>

基本甜面团材料:<br />(A)高筋面粉 50g, 滚水 35g<br />(B)高筋面粉 150g,低筋面粉 50g,糖 40g,盐 3g,奶粉 10g, 即用酵母 4.5g<br />(C)冷水 90g, 冷蛋 30g<br />(D)牛油 30g<br />(E)蒜蓉酱适量<br /><br /><br />做法:<br />1. 将A里的滚水加入面粉中搅拌成团。盖起来,冷却后放入冰箱冷藏最少12小时。<br />2. 将B拌匀,然后加入C搅拌成粗面团。加入A混合搅拌均匀。<br />3. 加入D搅拌成光滑及富弹性面团。用保鲜膜将它盖起来,让它发酵40分钟。<br />4. 将面团分割然后搓圆。松弛10分钟。</div>

<ol><li>所有材料,除牛油外,依序加入盆內,用低速搅拌成面团。</li>
<li>加入牛油,然後用高速搅打约10分钟。</li>
<li>打到面筋擴展,就是面团可以拉成薄膜狀即可。蓋好,放在溫暖处发酵1小時。</li>
<li>发酵完成后会膨胀双倍大,用手指按下去;凹处会浮起表示面团发的刚刚好。</li>
<li>翻面,排气,分割成4份。 </li>
<li>擀长,卷起,放入土司模。</li>
<li>发酵至8分满,在面团表面划上一刀,涂上蛋液,排上冷牛油条适量。</li>
<li>预热烤箱170度,烤35分钟。</li>

細砂糖 3湯匙(有包餡可减少一大匙) <br />

做法: <br />
1. 南瓜去皮切成薄片,蒸軟,放入大碗裡壓成泥狀,加入細砂糖拌勻. <br />

2. 把糯米粉加入南瓜泥拌勻,然後揉成麵團 (揉好的麵團較乾,切記不能加水,麵團太濕太軟煎的時候不易成型而且容易粘鍋) <br />
<br />
3. 把麵團分割成小塊,每份先搓成小圓球,然後輕輕壓扁成圓餅。(麵團較乾, 壓扁成餅的麵團會裂開少許) <br />
<br />
4. 加熱平底鍋,加入少許食用油,轉小火,把圓餅放進鍋裡用小火慢慢煎, 要注意翻動,煎至微黄時加入少許奶油再繼續煎至两面金黄色, 拿起用廚房紙吸去多餘的油份即可. (一定要等南瓜餅的一面煎至硬身金黄,才用鏟小心地翻身,至另一面也煎熟後即可)。<span style="color: grey; font-family: SimSun; font-size: 10.5pt;"><br />

上次去烘焙店就随手拿了一罐抹茶粉<br />

做法:<br />
1)准备一个9”的海绵蛋糕,将它向横切开两片<br />
2)将(A)煮沸加入(B)拌均续煮沸。加入(C)搅拌均匀续煮一会儿(煮到有点浓稠)<br />
3)加入预先拌均放在热水上煮至溶化的(D)混合拌均<br />
4)将(3)放在冷水上冷却,马上加入(E)搅拌至均匀即可<br />
5)将一片蛋糕放在模子里。将一些香蕉片放在蛋糕上然后将一些馅料铺在上面<br />
